It’s what’s inside that counts too…

This is not an exhaustive list of sponge flavours, just some of my favourites which are sandwiched together with flavoured compotes, curds, caramels and my silky smooth, airy decadent Swiss meringue butter cream. (SMBC). All cakes are crumb coated with a dark chocolate ganache, the final coat of either white chocolate ganache or ganache buttercream becomes a canvas for applying natural pigments and edible garnishes.

Reading on will get your mouth watering.

Classic victoria sponge

Vanilla sponge flavoured with homemade madagascan vanilla bean paste, sandwiched with strawberry jam, Swiss meringue buttercream.

Sticky toffee Cake

A light but flavour loaded sponge with soaked Medjool dates, black treacle, vanilla bean paste.

Bergamot & lemon citrus explosion

Bergamot and vanilla bean flavoured sponge, homemade bergamot and lemon curd, lemon SMBC.

OR, out of season ‘floral & citrusy’ Bergamot Earl Grey.

Lemon & Elderflower

A light sponge of zingy citrus, homemade floral elderflower cordial. Sandwiched with a choice of cream cheese frosting, SMBC, homemade lemon curd.

rich Chocolate fudge

A decadent dark chocolate cake. Sandwiched with a choice of chocolate crémeux, SMBC, chocolate ganache, freshly whipped cream or both! Simply leave it as chocolate or add black cherry’s, raspberries, coconut, rosemary, orange…..

Lavender & Berries

Floral lavender flowers and vanilla bean sponge laced with blackberries / blackcurrants.
Chocolate ganache layered with vanilla bean SMBC.

Apple with salted miso caramel

Think toffee apple with a twist. Slithers of apple, ground cinnamon, miso baked in a soft brown sugar sponge. Sandwiched with SMBC, salted miso caramel. *N/*S

carrot & walnut cake

A moist cake with rum soaked raisins (optional). Filled with a cream cheese frosting or lemon/orange infused SMBC. *A/*N

Black sesame & Tahini

A flavour requested by a client, it has really won me over. Black sesame, local honey make the paste which gives the cake amazing depth with nutty tones, moist yet not dense. Filled with a tahini buttercream or tahini crémeux, a hit of grated orange zest. *N

Chocolate & Stout

A warming chocolate cake enriched with stout, filled with either whipped cream cheese or SMBC. *A

Gateau Santiago

A light moorish Spanish cake of ground almonds, infused with lemon and orange. *N/GF

BANANA & CINNAMON

A banana sponge cake spiced with ground cinnamon, sandwiched with a plain chocolate ganache SMBC or chocolate crémeux.

RoseHip & Raspberry

A light vanilla sponge, brushed with homemade rosehip syrup, sandwiched with mascarpone cream or vanilla bean SMBC, fresh raspberries.

Spiced Hot Toddy

Hot whiskey, honey, lemon syrup infuse into the spiced aromatic sponges (ground cloves, cardamom, mixed spice, cinnamon, nutmeg) before finishing with a smooth whiskey SMBC, and refreshing homemade lemon curd. *A

gin & Tonic

Gin & tonic sponge brushed with gin & tonic syrup infused with juniper, sandwiched with SMBC infused with citrus lime. *A

RED VELVET

Plush red velvet in colour, with a hint of chocolate coffee on the palate, sandwiched with fresh cream cheese butter cream or vanilla bean SMBC, or chocloate crémeux..

CHOCOLATE & BEETROOT

Earthy, rich, moist. A delicious decedent cake, need I say more.

COFFEE & WALNUT

Shots of espresso, plenty of nuts, traditionally sandwiched with a single shot espresso SMBC. *N

COCONUT, CARDAMOM & LIME

A family favourite, tropical, warm fragrant spice from the cardamom, a refreshing zingy hit of lime. Sandwiched with a lime crémeux, or chocolate ganache or citrus lime SMBC. *N

If you are looking for a ‘no-frills’ treat such as your traditional iced home baked sponge or sandwich cake with all the flavour but without the celebratory garnishes, then please ask as I am happy to quote for a delicious cake to share, whatever flavour tickles your fancy!

If you have an allergy please discuss the options with me as my cakes are made in a kitchen which handles the following allergen ingredients:- nuts, sesame, wheat, dairy, soya, alcohol and further allergen ingredients which may cause an allergic reaction.

Dairy is used in all of my cakes, either in the form of egg, butter, milk, cream, chocolate.
